Cooking Kenkey
Kenkey is like a sourdough dumpling. The traditional way to make Kenkey takes a few days, because you have to let the dough ferment. But we modified the recipe so you can mix it up, and eat it in the same day. BE WARNED, you still have to start early, because this is no last-minute dish! So get your mom or dad and get mixing!

Kenkey Ingredients
2 cups of fine ground corn meal
or any other cornmeal product (white is best).
1 cup of warm water
1 teaspoon of vinegar or lemon juice
Salt and pepper to taste
Corn husks, or tin foil
Method
1. Mix the warm water and the cornmeal together.
2. The dough should be a ball up for a soft play-dough like consistency.
3. Depending on the corn meal, you may have to add more cornmeal or if it becomes
too hard and stiff, a bit more water.
4. When its all mixed, put it in a clean oiled bowl and cover it with a clean cloth.
5. Put the bowl in a warm place, like on a sunny widow shelf, warm up the oven for a
few minutes and then turn it off. Younger kids should not do this without a parent or
older person present.
6. Let the dough sit for six hours. It may get a bit puffy, that's good!
7. Put some flour on a clean flat surface. You're about to kneed the dough.
8. Turn the dough out onto the floured board. Make a small bowl in the middle of the
dough and put the vinegar in it.
9. Kneed the dough, making sure that you mix the liquid in as well as possible.
10. Get a pot and boil one cup of water. Divide the dough and put half into the boiling
water. Stir it well and cook it for less than 10 minutes.
11. Now, combine the cooked dough with the uncooked dough.
12. Divide it up into balls the size of small eggs, and wrap with the foil or the husks (you'll
want to tie the husks so they make nice packages).
13. Now put a steaming rack in a big pot with water just to the bottom of the rack.
14. Put the wrapped dough-eggs into the steamer, and steam for about 30 minutes. Make
sure you check to water frequently.
15. You can eat the Kenkey warm or cold, with any kind of main dish.
